Cinnamon Sugar Pita Chips

Homemade Cinnamon Sugar Pita Chips – A simple and tasty snack that is perfect for dipping! Crunchy, sweet, and oh-so delicious!

So I made these to go with my Carrot Cake Dip last week and they were perfect together! I was looking for something similar to make to go with the dip because all I had was fruit which did not really seem to pair well and thought of this idea! Sadly, they did not get a ton of love when it came to photographing them though because I was exhausted by the time it came to them after making the dip, these chips, and some chicken so I will probably go back and make these again soon enough to get in better pictures! They were SO easy to make and would be so great with so many things!

In high school, I was obsessed with pita chips.  I literally would go through bags and bags of them, both original and cinnamon.  My favorite was Stacy’s cinnamon, they are so good! Since then though, I haven’t had as many but they still are so good to snack on sometimes! Recently, my go to snack has been grapes and blackberries because I just keep having those on hand because blackberries have been the cheapest berries up here for the past few weeks and grapes are just always pretty reasonably price and tasty!

Homemade Cinnamon Sugar Pita Chips

Ingredients

  • 5 pita rounds
  • 4 tbsp coconut oil (melted)
  • 4 tbsp granulated sugar
  • 1 tbsp cinnamon

Directions

  1. Preheat the oven to 400°F and line a baking sheet with aluminum foil.
  2. Cut the pita in 8 slices that are wedge shaped.
  3. In a small bowl, combine cinnamon and sugar.
  4. Cover both side of the pita slices with coconut oil and sprinkle with cinnamon sugar.
  5. Bake for 13-15 minutes or until chips are crisp.

Honey Roasted Almonds

Honey Roasted Almonds – Almonds roasted and then covered in a delicious honey glaze and sugar.  They are so addicting!

I’ve been dying to make these Honey Roasted Almonds for months! After I made the Maple Cinnamon Candied Walnuts, I knew I had to try making more candied buts because they were just so good! I always enjoy things that have both honey and almonds in them so I decided to combine them into one delicious snack! Needless to say, they were devoured incredibly quickly and for good reason! I’d find myself eating a handful every time I went into the kitchen and then coming back to grab another handful immediately!

I ended up finally getting around to making these about a month ago but then life got in the way and I never actually put together a post.  Having been up since 2 AM because of the lovely jet-lag from an 11 hour time difference here in Japan, I decided it was a good time to go for it because there’s not much else to do at 2 AM other than quietly hang out in my hostel until it’s late enough to go buy some melon pan!

Honey Roasted Almonds

Ingredients

  • 2 cups whole almonds
  • 3 tbsp honey
  • 1 tbsp coconut oil
  • 3 tbsp water
  • 1/4 cup coconut sugar
  • 1/8 tsp cinnamon
  • Pinch of salt

Directions

  1. Spread almonds on baking sheet lined with parchment paper and cook for 15 minutes at 350°F, occasionally flipping nuts over.
  2. While nuts are roasting, combine coconut oil, honey, and water in a medium saucepan.
  3. Bring liquids to a boil and add in almonds.
  4. Continuously stir almonds until they have mostly absorbed the liquids.
  5. In a small bowl, combine cinnamon, coconut sugar, and salt.
  6. Transfer almonds to a baking sheet lined with parchment paper and sprinkle cinnamon sugar mixture evenly on to the almonds.
  7. Let cool and enjoy!

Pepperoni Pizza Pretzels

Pepperoni Pizza Pretzels – Everything you love about pizza and pretzels combined into one tasty snack! The pretzels are stuffed with pepperoni and cheese then baked to golden perfection!

I’m on a pretzel kick right now! Between the Cinnamon Roll Pretzels and now these Pepperoni Pizza Pretzels, I have been basically living on pseudo-pretzels.  This time though, these were savory and delicious! I stuffed them with italian blend cheese and pepperoni before twisting them into their iconic shape and smothering them with a mix of melted butter, italian seasoning, and minced garlic.  Oh, and did I mention that dipping them in pizza sauce makes the whole experience even better!

I made these before my American Literature class one day and really just ended up sitting there the whole time thinking about them, excited to dig in when I got home.  Unfortunately, I managed not to get an sides to go with them so I had to make do with boxed couscous but hey, it was still a great meal.

Pepperoni Pizza Pretzels

Ingredients

  • 1 can of pizza dough
  • 1/2 cup italian shredded cheese
  • 1/2 cup pepperonis (mini pepperonis would work best but I was unable to find them so I sliced normal sized pepperonis into 8 pieces)
  • 2 tbsp butter (melted)
  • 1/2 tsp italian seasoning
  • 1/2 tsp minced garlic
  • 1/4 cup shredded parmesan

Directions

  1. Preheat oven to 400°F.
  2. Open and unroll pizza dough before slicing into 6 pieces along the shorter side of the rectangular pizza dough.
  3. Sprinkle italian cheese and pepperonis evenly across the slices of pizza dough.
  4. Fold each pizza dough slice over horizontally so that the edges meet and pinch the dough in along where they meet so that the cheese and pepperoni are inside.
  5. Twist into the shape of a pretzel.  Cross the dough and twist the dough around where it crosses.  Place the ends near the middle of the dough with a bit of space inbetween.
  6. In a small bowl, combine the melted butter, italian seasoning, and minced garlic.  Drizzle on top of the pretzels.
  7. Sprinkle parmesan on top of pretzels.
  8. Place pretzels onto a cookie sheet with parchment paper as lining.
  9. Bake for 20 minutes or until lightly browned.
  10. Pull out the pretzels and let cool before eating!

Cinnamon Roll Pretzels

Cinnamon Roll Pretzels – All of the tastiness of a cinnamon roll twisted into the fun shape of a pretzel with a cream cheese frosting dip to dunk into!

I’m finally back to blogging! Between how busy the holidays were and starting the new semester, cooking has gone a bit by the wayside.  My friend made cheesy pretzels when we were hanging out and they were AMAZING! So I got to thinking of other variations on the pretzels and then came up with the idea of cinnamon roll pretzels.  Yes yes, I know that these barely quantify as pretzels past the shape.  I’ve made genuine pretzels before but these are easy, delicious, and take way less time.  To make things even better, I whipped up a cream cheese frosting dip because I feel as though pretzels need to be dipped!

I ended up making these with bacon and hashbrowns for dinner last night and it was so good! The perfect addition to breakfast for dinner!

Cinnamon Roll Pretzels

Ingredients

Dough

  • 1 can of pizza dough
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon
  • 1 tbsp butter

Cream Cheese Frosting Dip

  • 1.5 ounces cream cheese (softened)
  • 2 tbsp butter (softened)
  • 3/4 cup confectioners sugar
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 400°F.
  2. Open can of pizza dough and spread out.
  3. Slice pizza dough into 6 pieces along the shorter side of the rectangular pizza dough.
  4. In a small bowl, combine cinnamon and brown sugar.
  5. Spread mixture evenly on all of the of pizza dough slices, leaving a little bit unused to sprinkle on top.
  6. Fold each pizza dough slice over horizontally so that the edges meet and pinch the dough in along where they meet so that the cinnamon mixture is inside.
  7. Twist into the shape of a pretzel.  Cross the dough and twist the dough around where it crosses.  Place the ends near the middle of the dough with a bit of space inbetween.
  8. Sprinkle the remaining cinnamon mixture on top of the pretzels.
  9. Place pretzels onto a cookie sheet with parchment paper as lining.
  10. Bake for 20 minutes or until lightly browned.
  11. While the pretzels are baking, combine butter, vanilla, and cream cheese in another small bowl and whip together using hand mixer for the dip.
  12. Slowly add in the confectioners sugar and mix until there are no lumps.
  13. Pull out the pretzels and let cool before eating!

No Bake Blueberry Almond Energy Bites – Start your day right with these tasty blueberry almond energy bites that are jam packed with oatmeal, Post® Shredded Wheat, dried blueberries, and almonds.  Delicious and healthy!

Welcome to 2017! With the new year in full swing, it’s time to start following through with all of our New Years resolutions! My resolutions were to eat healthier, to eat breakfast everyday, and to eat out less.  I picked those resolutions because I want to make new healthy habits that with benefit my life for years to come.  It can be so hard to follow through on our New Years goals sometimes, last year I made a list and then lost it until months later when I was cleaning.  Whoops! To combat that, I grabbed my brand new planner for 2017 and put a list of my goals right now the first page so everyday when I open it, I remember what I am trying to do and the importance of these goals!

To start out on a good foot, I whipped up a batch of these No Bake Blueberry Almond Energy Bites and boy, were they good! Breakfast can be so forgettable and easy to just decide to skip so why not jazz it up and make it the most memorable meal of the day, something to get excited about and look forward to! I made sure these bites were packed with healthy ingredients from old-fashioned oats to Post® Shredded Wheat to raw almonds and they were so filling! These blueberry almond bites have whole grains, protein, and even antioxidants! Great, right? I’ve been a big fan of Post® Shredded Wheat cereal for a while and it was such a great addition to these energy bites! They give a bit of crunch and have such a great flavor.  I love that they are a less processed cereal that I can feel good about eating!

No Bake Blueberry Almond Energy Bites

Ingredients

  • 1 cup old-fashioned oats
  • 1/2 cup crushed Post® Shredded Wheat
  • 1/3 cup chopped almonds
  • 1/2 cup dried blueberries
  • 1/2 cup almond butter (add more as needed if balls aren’t sticky enough)
  • 1/4 cup honey
  • 1/2 tsp vanilla extract

Instructions

  1. Microwave almond butter and honey in a microwave safe bowl until runny, about 20 seconds.
  2. Pour Post® Shredded Wheat into a large ziploc bag and seal.  Use a rolling pin to slightly crush cereal but do not pulverize.  Leave some chunks.
  3. Combine all dry ingredients in a large glass bowl and stir.
  4. Pour in almond butter, honey, and vanilla extract into the dry ingredients and stir until combined.
  5. Roll balls or use a 1-2 inch cookie scoop, placing each ball on to a cookie sheet covered in parchment paper.
  6. Place in refrigerator for at least 20 minutes before eating.  Enjoy!

These walnuts are seriously addicting! I ate almost all of them as soon as I took these pictures, think I would just have one of two and then next thing I knew, I just had a sad little pile left.  But boy, was it worth it! I don’t think I could share these!

Apart from these tasty nuts, it has been such a hectic week! It is the last week of classes and every class seemed to have something big due.  The projects included everything from essays about rhetoric, to building a computer micro-architecture, to even recording a podcast.  Quite a range of things! It will be so nice to have a few weeks off after this to finally get around to reading all the books I got about 10 pages into during the semester like American Gods which I started for a book club this year that I never once meant to a meeting for.  Two years in a row I have gotten the book and never shown up.  I have good intentions, it is Friday nights which is also has been pizza night for my friend and I for over a year and pizza trumps reading for me! In addition to reading, I will hopefully finish up Pokemon Moon…. So yeah, I got some big plans for my free time! I kept optimistically starting time consuming projects in hopes I would finish them and sadly, never really did.

Maple Cinnamon Candied Walnuts

Ingredients:

  • 2 cups shelled walnuts
  • 1/4 pure maple syrup
  • 1/4 tsp cinnamon
  • 1 tsp vanilla

Directions:

  1. Heat medium non-stick pan to medium heat.
  2. Combine all ingredients and continuously stir for 5 minutes.
  3. Lay out a sheet of parchment paper on a cookie sheet and transfer walnuts to sheet to cool.
  4. Let sit for at least two hours before storing in containers.
